If you could eat anything for supper, what would it be? I'd go for a lovely big salad any day of the week over pretty much anything else! This one is loaded, and oh so good! It's a combination of two different spinach salads I've had in restaurants (Apeldoorns and The Airport Cafe). It's nice served with homemade baguettes or biscuits, but this time we just had the salad and it was very satisfying and delicious.
Brown Sugar, just a little to sprinkle on the apples
Cauliflower, chopped fine so it resembles feta cheese
Bacon, cooked and crumbled
Eggs, hard boiled and sliced
Wash, slice and dice all the salad ingredients to your preference.
Honey Garlic Dijon Dressing
1 part Balsamic Vinegar
2 parts Olive Oil
Squirt of dijon mustard
1 tsp lime juice
1/4 tsp black pepper
3 cloves garlic, minced (or use less garlic for a less tangy dressing)
1 tbsp honey
Whisk together or purée all the dressing ingredients. I like to use my immersion blender for this.
