Baking :: Mexican Hot Chocolate Brownie Bites


If you want brownie bites with bite, these are them! I was looking for a recipe this morning that did not require butter. I needed to bake something for a ladies event at our church, something valentinesy. I dug up this brownie recipe that I blogged 5 years ago and added two key ingredients that totally sent the flavour over the top.

Secret ingredients: cinnamon and cayenne pepper

1 1/2 cups flour
2 cups sugar
1 tsp salt
1/2 cup cocoa
2 tsp vanilla
1 cup cooking oil
4 eggs
1/4 cup water
1 cup choc chips

1 tsp ground cinnamon

1/2 tsp ground cayenne pepper

Powdered sugar and heart cinnamon candies for decorating.

Combine all of the brownie ingredients and mix well. Scoop into mini muffin tin lined with small cupcake liners. These red ones leftover from Christmas did the job perfectly! They're Martha Stewart (from Liquidation World ... ie. cheap).

Bake at 350° for 15 minutes or until toothpick comes out with only a few dry crumbs on it. The recipe made 36 mini brownie bites and an 8" x 8" pan of brownies. While still warm, dust with powdered sugar.
