Recipes :: Leftover Taco Chili

One of my favourite things to use in the kitchen all fall and winter is my crockpot! I love being able to prepare dinner in the morning and not have to worry about it during the after school rush, especially on days when there are after school activities! Having a full crockpot waiting at home prevents a lot of inadvertent trips through the drive through! Healthier, cheaper and more delicious. :)

On that note, today in the crockpot I've got the easiest chili you could imagine! We just had tacos, so I dumped all of the taco fixin's into the crockpot, added a couple cans of beans, chili powder and cumin. It smells so good already!

Growing up, my Mom would never/rarely use a recipe, even for baking, if you can imagine! Since not all of you were lucky enough to grow up in my Mom's kitchen, I will expand on the recipe to let you know roughly what's in my crockpot!

Leftover Taco Chili

imagine. dream. create.1 lb extra lean ground beef
3 tbsp sliced black olives
3/4 cup diced fresh tomatoes
1 cup diced onion
1 cup medium salsa
3/4 cup diced red peppers
1 tbsp chili powder (or more if you like it spicy!)
1 tsp cumin
1 540 ml can 6 Bean Mix
1 540 ml can Red Kidney Beans

Brown ground beef in a frying pan, drain off fat. Stir in one cup of water and 6 tbsp taco seasoning. Bring to a boil. Simmer uncovered for ten minutes, stirring occasionally.

Throw everything into the crock pot.

Set your crockpot to low and simmer all day. A minute before serving you can add the juice of one lime and a handful of chopped cilantro to brighten the flavours. Top with a dollop of sour cream and a sprinkling of grated cheddar cheese.
