{ chocolate zucchini cupcakes }

Hello!

Last night we were invited out to an amazing barbecue with a group of wonderful friends and their families at Andrea's. I made these cupcakes and a Weight Watcher friendly southwestern-ish salad. Everyone brought such delicious food! Andrea's husband grilled chicken with melted cheese and pineapple on it. Yum. Thanks so much for having us all over, Andrea!

The recipe I used for the cupcakes came from Mennonite Girls Can Cook. I'll also put it below (mainly because I like to keep recipes I plan to re-use on my blog for easy reference!).

Chocolate Zucchini Cupcakes

1/2 cup softened margarine
1/2 cup canola oil
1 1/2 cups sugar
2 eggs
1 tsp vanilla
1/2 cup 1% milk mixed with a tbsp of lemon juice (or use buttermilk)
2 cups grated zucchini..(peel and all)
2 1/2 cups flour
1/2 cup cocoa
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 tsp cinnamon

Cream butter, oil and sugar, blend in vanilla, eggs and buttermilk. Mix dry ingredients and shredded zucchini and mix in with the moist ingredients. Pour into a cupcake liners. Bake in preheated 325 oven for 23 min. Glaze while warm or cold - it doesn't make a difference. If you glaze while warm, the glaze will remain shiny!

Decadent Chocolate Glaze

1/3 cup semisweet chocolate chips
2 tbsp hard margarine
2 tbsp light corn syrup
Icing sugar (enough to thicken)

Heat chocolate chips, butter and corn syrup over medium heat until chocolate chips are melted. Gradually add enough icing sugar to make it a nice thick, but spreadable consistency. Stir until smooth. Spread over cupcakes.

{ csn slipcovers save the day! }

Hello!

Wow, it's the middle of summer already - unbelievable! One of my little goals for the summer was to gradually start re-decorating my living room. I am so inspired by The Nester's beautiful home and am hoping to incorporate a few of her touches into my living room. I would copy it exactly if I could! So far I have given away my 1996 over-stuffed over-sized couch and love seat and got a free couch from my Aunt. I love the shape of the couch and it's in perfect condition, but the upholstery didn't exactly go along with my dream living room. So, I decided to use my latest gift certificate from CSN Stores to order a white/natural slipcover for this couch and matching ones for 2 of our dining room chairs. I am happy to say that I've received the slipcovers (they arrived by Purolator Courier yesterday! woohoo) and they look just as nice in person as they did online.

I also purchased an arm chair with matching ottoman for only $90 on craigslist and would like to either re-upholster it or purchase a slipcover for it as well. The current upholstery isn't bad, but once again doesn't go with what I'm dreaming of. lol I also plan to paint the living room, replace the curtains, paint the coffee table and entertainment unit. I am thinking this will turn into a fall & winter project, though! Summer is running out too fast!

PS. I would take pics of my re-decorating progress, but my silly Sony 4.1 Mega Pixels Cyber-shot camera is permanently on the fritz and a new one is not yet in the budget! So annoying.
