{ pasta salad creation }

At 5:12 pm it is 33 Celsius here! Needless to say, I didn't want to heat up our (un-air conditioned) house even more by spending an hour over a hot stove so I decided to whip up a quick & delicious pasta salad for supper. Here's the recipe:

Pasta Salad Creation

Cooked bow tie pasta (cuz they're cute)
2 cans of tuna or salmon (drained, of course)

Slice & Dice:
1 cucumber
1 large tomato
4 green onions
1 red bell pepper
4 celery stalks
4 hard boiled eggs

Dressing (I just throw all of this on top of the other ingredients in the salad bowl. No need to mix it separately)

-Hellman's olive oil mayonnaise
-salt
-lemon & pepper seasoning
-garlic powder
-zest and juice of one lemon (nuke it for 10 seconds before you juice it and you'll get more juice out of it)
-paprika
-dill

Mix everything together, cover and put in the fridge until it's cold. If you wait an hour to eat it, it will taste better. It gives all the flavors time to marry.

  2. Yummy!!! I love cool pasta salads on hot days in the summer!
    We didn't have anything quite so great... chili dogs, fries, and cantalope.
    It was baseball practice and grocery shopping night... that's all I could force myself to do!

  3. looks great! i tried homemade pizza pops last night (ok, so my house was not as cool as yours when we went to bed ;) but they were great. will be making them again -- perfect to stock up on for school lunches -- wish i'd discovered them earlier in the year

  4. Looks really good...we just had BBQ chicken and it was even too hot to BBQ..which is usually my husbands job but he was not home for dinner last night so it was up to me...i think the weekend will be cooler...keeping my fingers and toes crossed!
