Baking :: Bread Machine Cinnamon Buns

Hello!

Here's a little taste of what I baked tonight... mmm warm cinnamon buns fresh from the oven smothered in cinnabon-ish cream cheese glaze!

Dough:

1 2/3 cups milk
2 tbsp butter
2 tbsp sugar
1 1/2 tsp salt
4 1/3 cups white flour (or 4 1/2 cups if you're in the US)
1 1/4 tsp yeast

Place all in your bread machine and click "dough".

When dough is ready, just place on a floured counter and poke it down with your finger tips then roll out with a rolling pin into a large rectangle. Spread with softened butter and handfuls of brown sugar. Sprinkle with lots of cinnamon and a dash of ginger. Roll up, slice and place in greased pan. Cover with a tea towel and set in a warm place to rise for half an hour.

Bake at 350 for 20-25 minutes. Half way through the baking time remove from oven and drizzle with a mixture of melted butter, brown sugar and milk (should be runny). Continue baking until nicely browned.

Cream Cheese Glaze:

4 oz cream cheese
1/4 cup unsalted butter
1/2 t vanilla
1 1/2 cups icing sugar
1/2 T milk

Combine all ingredients and mix until smooth. Frost warm cinnamon buns with cream cheese glaze.

Variations: sometimes I like to add finely chopped and peeled apples to the cinnamon buns before I roll them up, or sliced almonds, or walnuts or raisins. Or I sprinkle toasted almonds on after the icing. This time I just left them plain and they were truly delicious.

PS. Since I wrote this post I no longer have a bread machine. I now make my dough in my Kitchen Aid stand mixer.
