Here's a yummy dip I made this morning because we bought too many red peppers! This is sooo good. I think we should buy too many red peppers all the time. The dip is pictured on a piece of luscious "Sole by Valori Wells for Free Spirit" fabric that I am going to turn into a pretty sun dress for my youngest.
Here is the recipe for the dip... please let me know if you give it a try and how you like it!
Roasted Red Pepper Dip
2 large red bell peppers
7 cloves of garlic
2 tbsp olive oil
Freshly ground salt & pepper
1/4 cup mayonnaise
3/4 cup sour cream
Line a baking pan with tin foil (shiny side up). Place whole peppers and whole garlic cloves (no need to peel them first) on the pan. Drizzle garlic with olive oil. Bake at 350 F until the pepper peels start to bubble and turn black. Place peppers in a sealed plastic bag and allow to cool completely. Once cooled remove the peels and seeds. They will come off very easily with your hands. Pop the garlic cloves out of their skin. Place everything in a food processor and puree. Refrigerate. Enjoy!
Another variation that I will try sometime is to add grated cheese and/or cream cheese to this and serve it hot.
You can eat this with crackers, chips or veggies.
