{ summer berry streusel coffee cake }

Once in awhile, when the weather is nice, the girls and I like to have a breakfast picnic at a nearby park. This is one of the recipes I picked out to make for our next breakfast picnic, but I just had to try it out today. The original recipe came from and old issue of the Taste of Home magazine, but I'll type it out how I made it:

Summer Berry Streusel Coffee Cake

2 cups flour
3/4 cup sugar
2 tsp baking powder
1/4 salt
1 egg, beaten
1/2 cup milk
1/2 cup butter, softened (20 seconds on half power in the microwave)
1 cup fresh or froze berries

Streusel:
1/2 cup sugar
1/3 cup flour
1/4 cup cold butter

In a mixing bowl, combine flour, sugar, baking powder and salt. Add egg, milk and butter; beat well. Fold in berries. Spread into a 9"x9" greased pan. In another bowl, combine sugar and flour; cut in the butter until crumbly. Sprinkle over the batter. Bake at 375 for 35-30 minutes or until a wooden pick inserted near the center comes out clean.

Hey Cindy, I came by your blog via the quilting bloggers list -- I love your cooking and you don't live too far from me, I think -- well you say you shop in Chilliwack and that is where my doc is so I am there every three or four months and stop at Hamel's but have not been to Cheryl's? Anyway, I have put you on my rss feed so will be back for a visit again!
