Caramel Apple Brownies

Caramel Apple Brownies


2/3 cup butter
2 cups brown sugar
2 eggs
1 tsp vanilla
2 cups flour
¼ tsp ground cinnamon
¼ tsp ground ginger
2 tsp baking powder
¼ tsp salt
1 cup chopped apples

Caramel Icing:

½ cup butter
1 cup brown sugar
¼ cup milk
2 cups icing sugar

First make the brownies. In a large bowl, cream the butter and sugar until smooth. Add the eggs and vanilla and mix well. Measure in the flour, baking powder, salt and apples, and stir until ingredients are thoroughly combined.

Spread batter in a greased 9 by 13-in.  baking pan and bake at 350°F for 35 minutes or until cake tester comes out clean. Let cool completely before icing.

To make the icing, melt the butter in a saucepan, then add the brown sugar and milk and bring the mixture to a boil. Remove from heat, let cool and stir in the icing sugar. Spread onto cooled brownies.
